LOW-CARB EASY CHEESECAKE
2 packages (16oz) cream cheese
½ powdered sweetener (stevia)
1 tbsp vanilla extract

Mix all ingredients with a beater until totally smooth. Pour into pie crust.
Bake at 350 for 20-25 minutes, until cheesecake is slightly cracked on the sides and pulling away from crust.
Remove from oven, cool on stove, then chill in refrigerator for 8 hours.
You can do ALL kinds of things to this recipe!!! Add lime or lemon juice and zest. Set a little batter aside and add cocoa to it. Mix well. When plain batter is in the crust, swirl chocolate batter in for a beautiful marble cheesecake. So much you can do!
